Good morning! Just 3 more days until Thanksgiving.
We planned to leave today for a week in sunny Los Angeles to celebrate Thanksgiving with our two sons and their families. We had to cancel our trip due to a family emergency and will now be spending Thanksgiving at home. I think we will probably eat our dinner at restaurant this year or maybe a friends house. It will be a sad holiday this year.
I was craving turkey so I baked a turkey breast last Monday and served it with mashed potatoes and gravy and green beans. I made a simple pumpkin mousse for dessert. Nothing smells better than a turkey in the oven. It was so delicious. I am sorry to say that the leftovers are long gone. The Pumpkin Mousse was delicious too! I am including the recipe in this post:
Makes 4 servings
1 – 15 ounce can of pumpkin.
1 – 8 ounce tub of cool whip lite.
1 – 3 ounce package sugar-free, fat-fee instant cheesecake pudding mix.
1 heaping tablespoon pumpkin pie spice.
Garnishes: whipped cream, sprinkles, cinnamon sugar, candies.
Mix all ingredients together and spoon into dessert cups. Garnish with whipped cream, sprinkles, or cinnamon sugar and refrigerate until ready to eat. (Hint: Blend thoroughly with a mixer on low speed to get a more uniform mixture.)
My turkey craving was satisfied but I still wanted some cranberry salad and pumpkin pie. I found some cute little pumpkin pies at Walmart. Each pie serves one person and is only a dollar! One serving is 340 calories. I added a couple of tablespoons of cool whip. It was delicious – creamy and just the right amount of spices. Walmart also has other kinds of little pies and cakes. The grocery store has a delicious cranberry salad.
Weekly Goal: Don’t Overthink it!
Thanksgiving is a day that is usually spent with family. I am disappointed that I will not be spending the day with my sons. My husband and I will chat with our children on the phone or facetime. No need to be lonely when you have a phone and can call or text your loved ones.
Thanksgiving is all about gratitude and giving thanks. I am so thankful for my amazing life and the people I love.
Last week was a difficult one. My poor little 82 year old mother-in-law fell and broke her hip. She was frightened and in alot of pain and had to have surgery. She passed away today and will be sorely missed. But, she is out of pain that’s a good thing.
I am so grateful to have known such a such a sweet, nurturing woman. She touched my life and taught me optimism and kindness. Best of all, she created this wonderful man to who I am married.
