It was a busy day today. I was reading the morning newspaper this morning and found an amazing recipe for dinner in the Dear Abby column. It was her Meatloaf Recipe. It looked delicious and I had almost all the ingredients except for the hamburger and breadcrumbs. No problem. Grocery shopping was on my list of “to dos” for the day. I had never seen seasoned Italian breadcrumbs before and was a little worried about finding them. Walmart had them and they were only a few dollars. I actually made the meatloaf early in the day, refrigerated it for few hours, and baked it an hour before dinner. It was delicious.
Dear Abby’s Meatloaf Recipe
2 pounds ground beef
1 cup seasoned Italian bread crumbs
½ cup chopped onion or 1 ½ teaspoons onion powder
⅓ cup ketchup
⅓ cup water
Pepper to taste
Salt if desired
4 strips of bacon if desired
( I also added 1 tablespoon of brown sugar and 1 tablespoon bacon bits)
Combine all ingredients in a large bowl except bacon strips. Shape into two loaves. Place in 9 X 5 inch loaf pans. Arrange bacon strips on top. Bake for 60 minutes. (Hint: Dear Abby’s Meatloaf Recipe calls for one loaf but if you divide the meat mixture into two loaves and bake, it is easier to get it done in the middle.)
We’re doing low carb this week so we ate our meatloaf with green bean and bacon and steamed carrots. For a more homey, and filling meal, serve with mashed or baked potatoes, vegetable, and a hot buttered roll.
Leftover meatloaf is amazing. Reheat in the microwave for your next meal and serve with instant mashed potatoes, bottled gravy, and a hot vegetable. Meatloaf sandwiches are an excellent chicle for lunch or supper. Leftover Meatloaf can also be crumbled into chili or spaghetti sauce. Meatloaf is so versatile.
