Fudge Brownie Cookies are easy and convenient to make when you are craving a chocolate treat or need something for a bake sale or to take to a potluck. The ingredients are very simple. You probably already have all the ingredients on hand. They are delicious and simply irresistible.
Fudgy Brownie Cookies
1/2 cup butter – cut into small pieces
1 – 12 ounce bag of semi-sweet chocolate chips
1 cup packed brown sugar
1 teaspoon vanilla
1 cup flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon salt
1. Combine butter and 1 cup of the chocolate chips in a 2 quart saucepan and and melt over low heat stirring occasionally. Remove from heat and stir in brown sugar. Cool slightly, stirring occasionally. Sir in eggs, and vanilla. Stir in remaining cup of chocolate chips. Drop tablespoonsful of dough onto greased cookie sheet.
2. Bake at 325 degrees for 10 minutes or until almost set.
3. Cool completely before removing from cookie sheet.

Replace the second cup of chocolate chips with M&M’s, peppermint candy chunks, or white chocolate chips for a more festive looking cookies. Top or drizzle with caramel or chocolate frosting for an even richer tasting cookie.
Easy Caramel Frosting
1/2 cup butter
1 cup brown sugar
1/4 cup milk
2 cups sifted powdered sugar
1 teaspoon vanilla
Melt butter in saucepan and stir in brown sugar. Cook and stir over low heat for 2 minutes. Add milk, continue stirring until boiling. Remove from heat. Cool to lukewarm. Put into small mixer bowl and add vanilla and sugar while beating on medium speed, then beat one low speed for one minute.
Fudgy Brownie Cookies are very moist and fudgy. They are quick and easy to make. They are a simple, rich cookie that can be dressed up with the addition of candies, sprinkles, or frosting. Clean up is easy, especially if you mix them up in a Dutch oven pan. They are easier to serve and transport than traditional pan brownies and just as yummy.
